Zucchini Mushroom Stir Fry

Zucchini Mushroom Stir Fry is a healthy and perfect addition to any meal. These kinds of recipes are always my favorites because they are so versatile. Zucchini and Mushroom Stir-Fry is a great option for weeknights because it's quick to make. Addition of garlic, Black pepper & some toasted seeds makes it super tasty. It is a quick and healthy dinner solution the whole family will love! Add your favorite protein or enjoy it as a vegetarian meal.

Ingredients :-

500 g./1.1 lb. Fresh Button Mushrooms (washed, stems on but trimmed and sliced thickly)

250 g./ 1 Zucchini, medium size (washed, cut into half lengthwise & sliced into half inch pieces)

3 tbsp./45 ml. Vegetable/Olive Oil (divided equally)

40 g./2 chiplets Butter (salted & divided equally)

1 Onion, medium size (finely chopped)

5-6 Garlic Cloves (minced)

Salt to taste

½ tsp. Black Pepper Powder

1 tsp. Sesame Seeds (toasted)

Method :-

Heat 1 tbsp. of oil in a non-stick pan. Add the sliced mushrooms to the pan and sauté for 2-3 mins on medium flame. Add butter to the pan and sauté for another 3-4 mins until mushrooms get light golden brown in colour. Stir continuously for even cooking

Once the colour changes to light golden brown, lower down the flame, dish out the sautéed mushrooms on a plate & set aside for later use

Heat 1 more tbsp. of oil in the same non-stick pan. Add the sliced zucchini to the pan and sauté for 2-3 mins on medium flame. Add butter to the pan and sauté for another 3-4 mins until zucchini gets light golden brown in colour. Stir continuously for even cooking

Once the colour changes to light golden brown, lower down the flame, dish out the sautéed zucchini on a plate & set aside for later use

Heat 1 more tbsp. of oil in the same non-stick pan. Add the chopped onions + minced garlic to the pan and sauté for another 3-4 mins on low medium flame

Once the onion colour changes to light golden brown add the sautéed zucchini + mushrooms + salt + black pepper powder to the pan and mix well. Stir for another 1-2 mins and switch off the gas

Transfer onto a serving platter, sprinkle a tsp of toasted sesame seeds and serve hot
