Aloo Bhindi Fry

Prep time: 20 mins I Cooking time: 25-30 mins I Serving: 2-3



Ingredients :-


500 g fresh Bhindi/Okra (washed & chopped to 1 inch thickness)

3 Potatoes medium sized (peeled, washed & diced to ½ inch thickness)

3 Onions, medium sized (chopped)

2 Tomatoes, medium sized (chopped)

1-2 Green Chilli, chopped (Optional)

6 tbsp. / 90 ml vegetable oil (divided)

2 tsp Red Chilli Powder

1 tsp Turmeric Powder

Salt to Taste


Method:-


Heat 4 tbsp. of veg oil in a non-stick pan. Add potatoes and stir for 2-3 mins on medium heat. Cover and cook until soft for 8-10 mins on low-medium heat. Keep stirring every 3-4 mins

Once cooked, low down the flame and dish out the cooked potatoes in a separate bowl. keep aside for later use(covered)


To the same pan add the bhindi/okra and sauté for 2-3 mins. Cover and cook until soft for 8-10 mins on medium heat. Keep stirring to avoid burning/sticking


Once the bhindi gets cooked and colour changes to light brown, lower the flame and dish out the cooked bhindi in a separate bowl. keep aside for later use(covered)


To the same pan add 2 tbsp. of veg oil. Next, add the chopped onions and sauté until light brown in colour for 5-7 mins on medium heat. Keep stirring


To the pan add chopped tomatoes. Mix well and sauté until soft and mushy for 5-7 mins on medium heat. Keep stirring


To the pan add chopped green chilli and stir for 1-2 mins


To the pan add salt + red chilli powder + turmeric powder and mix well with the masala and cook until oil separates


To the pan add cooked potatoes and bhindi /okra and mix well with the masala. Cook for 2-3 mins on medium heat and switch off the gas.


Time to taste:)

Serve hot with paratha, chapati & rice & dal
