Aloo Gobhi Dhaba Style

Ingredients: 250 - 300 gms Cauliflower, medium sized (cut into medium florets)
3 Potatoes, medium sized (cut into 1 inch length wise)
2 cups/ 450 ml Water (for blanching)
5 tbsp / 70 ml Veg Oil (divided)
2-3 Red chilli (dried & whole)
1 tsp Cumin Seeds/jeera
2 tbsp Garlic Cloves (finely chopped)
1 inch Ginger (finely chopped)
3 Onions, medium sized (finely chopped)
2 Green Chilli, chopped (optional)
3 Tomatoes, medium sized (puree)
1 tbsp Red Chilli Powder
½ tbsp Turmeric Powder
Salt to taste
1 tsp Garam Masala Powder
2 tbsp Fresh Coriander (finely chopped) 2 tbsp Fresh Cream Cooking process:
Take 2 cups of water in a vessel and add the chopped cauliflower and potatoes along with 1 tsp of salt and boil it for 10 minutes on a medium flame.
After 10 min switch off the flame, drain the water and keep aside the veggies for later use.
In a kadai / pan heat 2 tbsp of oil on a medium flame. Then add the blanched veggies and sauté for 5-7 minutes on medium heat until light golden brown. Keep stirring to avoid burning
Once done, slow down the flame, dish out the fried veggies on a plate and keep aside for later use.
In the same kadai/wok add 3 tbsp of veg oil + dried red chillies + cumin seeds + garlic and ginger, stir on a medium flame for 2-3 minutes until colour changes to light golden brown
Next add the chopped onions and sauté until soft, then add green chillies and fry until onion colour changes to light golden brown
Next add tomato puree. Stir for 3-4 min on medium flame
To the pan add red chilli powder + turmeric powder. Mix well with the masala until oil separates . You may 2 tbsp of water to avoid sticking of the masala
To the pan/kadai add the fried aloo Gobhi +salt and mix well. Cover it and let it cook for 5-7 minutes on low flame.
Turn off the flame and add garam masala powder + chopped coriander and cream. Mix well and it's ready.

Serve hot with naan/chapati/paratha & salad
