Cabbage and Peas Stir Fry

Cabbage and Peas Stir Fry is a healthy and perfect addition to any meal. These kinds of recipes are always my favourites because they are so versatile. This recipe is a great option for weeknights because it's quick to make. Addition of fresh peas with cabbage, black pepper & some fresh coriander makes it super tasty. It is a quick and healthy dinner solution the whole family will love!

Ingredients :-

1 Cabbage, large (sliced into 1 inch strips, lengthwise)

500 g. Fresh Green Peas

4-5 tbsp. Veg Oil1 tsp. Cumin Seeds

3 Onions, med-size (finely chopped)½ tsp Turmeric Powder 

2 Tomatoes, med-size (finely chopped)Salt to taste1.5 tsp Red Chili Powder½ tsp Cumin Powder

1 Green Chili (seeds removed & finely chopped)½ tsp Black Pepper Powder2 tbsp. Green Coriander (finely chopped)

Method :-

Heat veg oil in a pan/kadai. Add cumin seeds and chopped onions to the pan and sauté for 7-8 mins on low-medium flame until colour changes to light golden brown (add more oil if required). Stir in regular intervals for even cooking

Add turmeric powder to the pan, mix well and stir for 5-10 seconds

Next, add chopped tomatoes to the pan. Mix well and stir for 3-4 mins on low-medium flame till tomatoes start turning soft

Add salt + red chili powder + cumin powder + coriander powder to the pan and mix well. Add chopped green chilies to the pan, mix again and stir for 3-4 mins on low medium flame until oil separates from the masala

Add peas + chopped cabbage to the pan. Cover and cook for 4-5 mins until cabbage turns soft on low-medium flame

After 5 mins remove the lid and stir to mix well. Lower down the flame, cover again and cook for next 8-10 mins until vegetables are cooked properly. Stir in regular intervals for even cooking

Remove the lid and stir for a minute. Once completely cooked, switch off the gas. Garnish with black pepper powder and finely chopped coriander leaves.

Time to Taste :)

Serve hot with Tawa Paratha, Laccha Paratha, ghee chapati and some chilled cucumber raita

Note : pls adjust the spice levels to your taste.
