Chicken Curry for Beginners
Prep time: 15 mins I Cooking time: 30 mins I Serving: 2-3

Ingredients :-
1 kg / 2.2 lb Chicken, curry cut (washed properly)
4 tbsp / 60 ml Veg Oil
10-12 Garlic Cloves (minced)
2 tsp Ginger (minced)
4 Onion, medium sized (grind to paste)
3 Tomatoes, medium sized (grind to puree)
1-2 Green Chillies, chopped (de-seed)
1.5 cups / 350 ml Hot Water (will fasten the cooking)
Salt to Taste
5-7 Fresh Coriander Sprigs, chopped
Spice Powders :-
1.5 tsp Turmeric Powder
2 tsp Red Chilli Powder OR to taste
1 tsp Coriander Powder
1 tsp Cumin Powder
1 tsp Garam Masala Powder
Whole Spices :-
5-6 Cloves
1 Star Anise
1 Black Cardamom
1-2 Bay Leaf
Method :-
Heat the Vegetable Oil in pressure cooker and add all the whole spices mentioned under the spice section
Next, add minced ginger + garlic and stir for 3-4 mins on low - medium heat
Then add the onion paste and sauté for 8-10 mins till light brown in colour on low - medium heat (it usually take some time)
Next, add tomato puree. Mix well and stir for 3-4 mins on low-medium heat
Then add salt + turmeric powder + red chilli powder + coriander powder + cumin powder. Mix well and stir for 3-4 mins
Next add chopped green chillies to the cooker. Mix well and stir for another 4-5 mins until oil separates from the masala on low-medium heat
Add chicken to the cooker and mix well with the masala and stir for 3-4 mins
Add hot water to the cooker and mix well. Pressure cook for 4 whistles on low-medium heat. After 4 whistles switch off the flame and let the pressure release naturally
Open and check the curry consistency. Garnish with fresh coriander and garam masala powder.
Time to taste:)
Serve hot with rice, roti or naan
