Coca Cola Mutton Chops

Coca Cola Mutton Chops with sweet & sour sauce are just heavenly delicious. Yummy sticky lamb chops which has a sweet, spicy chili sauce coated all over the cooked lamb chops. This lamb chops can be served on its own as a appetizer or as a side. When roasted the meat is tender and super flavorful and then its simmered in sweet spicy sauce. The glaze coats the lamb like a sticky sauce which is simply irrestible. Cuisines of this type makes a perfect holiday mood and can be enjoyed anytime with your loved ones. Ingredients :-

For Marinade :- 1 kg/2.2 lb Lamb Chops (wash thoroughly & pat-dry) 1.5 tsp. Salt 1.5 tsp. Black Pepper Powder 1 tsp. Red Chilli Powder ½ tsp. Smoked Paprika Powder 2 Tsp. Garlic & Onion Powder 1 tsp. Oregano 1.5 tsp. Roasted Cumin Powder ½ cup Brown Sugar + Jaggery Powder (3 tbsp. each) 3 tsp. White Vinegar

For Baking :-

10-12 Rosemary Stems (small)

For Sauce :-

¼ cup/60 ml. Water

¼ cup/50 ml . Tomato Ketchup 3 tsp. White Vinegar 1 tbsp. Honey

¾ cup/180 ml. Coca Cola

1 tsp. Spicy Yellow Mustard Paste

For Veggies Sauté :-

1.5 tsp. Vegetable/Oilive Oil

20 g. Butter (salted)

8-10 Cherry Tomatoes

8-10 Broccoli Florets 7-8 Garlic Cloves (minced) ¼ tsp. Black Pepper Powder Salt to taste

Freshly Chopped Coriander (for garnishing)

Method :-

For Marinade :-

In a large bowl add mutton chops + all the ingredients mentioned under the marinating ingredients list to the bowl. Mix well until all the pieces are well coated. Cover it and set aside for at least 3 hours or overnight for the best results

For Baking :-

Preheat the oven to 400 degrees F (200 degrees C)

After 3 hrs/next day before baking take out the chops from the refrigerator, remove the lid/cling film, and mix again well with the marinade

Line a baking tray with butter paper and transfer the marinated mutton chops to the prepared sheet. Place the small rosemary stems on top of the each mutton chop

Transfer the baking tray to OTG and roast in the preheated oven for 40-45 minutes. After 45 mins, take out the tray & baste the mutton chops with the remaining marinade and continue to cook until golden on the outside and soft in the center, about 20-25 more minutes or until properly cooked

Once the mutton chops are cooked properly, take out from the oven & set aside

For Sauce :-

Heat water in a non-stick pan. Next add tomato ketchup + white vinegar +honey + coca cola + yellow mustard paste to the pan. Mix well and stir for 1-2 mins on low medium flame. Cook for next 7-8 mins until the sauce thickens. Stir in regular intervals. Once the mixture thickens to a runny sauce like consistency, switch off the gas and set aside covered

For Veggies Sauté :-

Heat butter + veg oil in a non-stick pan. Next add cherry tomatoes + broccoli to the pan and sauté for 1-2 minutes on low-medium flame Next add minced garlic + black pepper powder + salt to the pan. Mix well and stir continuously for next 3-4 mins on low medium flame. Once the veggies starts turning soft, switch off the gas

Transfer the cooked lamb chops along with the sautéed veggies to the serving plate and pour the prepared sauce over the mutton chops and garnish with some freshly chopped coriander. Enjoy this delicacy with your loved ones
