Crispy Corn Fry
Prep Time: 20 mins I Cooking Time: 30-40 mins I Serving: 2-3

Ingredients :-
For frying :-
2 cup/330g Sweet Corn Kernels
Salt to taste
½ tsp Black Pepper Powder
¾ cup/100g approx. All Purpose Flour
½ cup/60g Corn Flour/CornStarch
200 ml Veg Oil (enough for deep frying)
For Stir-fry :-
2 tsp Veg Oil
5-6 Garlic Cloves (peeled & finely chopped)
2 Onion, medium-sized (finely chopped)
2 tbsp/50 g Bell Peppers/Capsicum Red/Green (finely chopped)
1-2 Green Chillies (finely chopped, Optional)
Salt to taste
½ tsp Cumin Powder (roasted)
½ tsp Chaat Masala Powder
¼ tsp Red Chilli Powder / Paprika Powder
1 tsp Lemon Juice
3-4 Sprigs Fresh Coriander (stems removed & finely chopped)
Method :-
For frying :-
In a bowl add sweet corn kernels + salt + black pepper powder + all purpose flour + cornstarch. Mix well
Add water (1 tsp only). Mix well till well coated
Heat enough oil in a non stick pan and deep fry the coated corns in batches
until crispy on high flame. Separate them gently using fork/spoon
when turned crispy, with the help of a slotted spoon dish out on an absorbent paper
Similarly, prepare the remaining corns and set aside
For Stir-fry :-
Heat veg oil in a non-stick pan. Add chopped garlic + onions to the pan and sauté for 3-4 mins on low-medium flame until translucent
Add chopped bell peppers to the pan and stir for 1-2 mins on low-medium flame
Next add chopped green chillies and stir again for a minute
Switch off the gas/turn off the flame
Add fried corns + salt + cumin powder + chaat masala powder + red chilli powder + lemon juice + fresh coriander. Mix well and serve.
Time to Taste:)
Serve with chilled Mojito OR any drink of your choice :)
