Egg Bhurji, also known as Anda Bhurji, is a scrambled eggs dish which is a popular Indian street food and a breakfast, lunch or dinner recipe. This quick recipe is flavoured with onions, chilies, ginger, tomatoes, veggies and some spices. Eggs are versatile and to make an easy and quick meal, a breakfast, lunch, brunch this is a perfect dish. It’s delicious, enjoyed with roti or paratha, or served with toast.

Ingredients :-
6 Eggs
1 tsp Black Pepper Powder
½ tsp Red Chilli Powder
2 tbsp/30 ml Veg Oil
1 inch Fresh Ginger (finely chopped)
1-2 Green Chilli (finely chopped) OR to taste
3 Onion med-sized (finely chopped)
2 Tomatoes, med-sized (finely chopped)
3-4 Fresh Coriander Sprigs ( finely chopped)
Salt to taste
Method :-
In a large bowl break 6 eggs. Add salt + black pepper powder + red chili powder. Whisk well and set aside covered
Heat 2 tbsp. of veg oil in a pan. Add chopped ginger to the pan and stir for 1-2 mins on low-medium flame.
Add chopped green chillies + chopped onions to the pan and sauté for 5-7 mins on low-medium flame until onion colour changes to light golden brown
Add chopped tomatoes to the pan and stir for 4-5 minutes until soft on low-medium flame
Next add chopped coriander + egg mixture to the pan and mix well. Stir for 2-3 minutes on medium flame and switch off the gas.
Time to Taste :)
Serve with crispy toasted butter bread slices, or paratha with a cup of coffee/tea
