Ingredients :-
7 Eggs (Hard Boiled & shelled) 6 + ( 1 reserved (for garnishing, optional)
3 tbsp. /45 ml Veg Oil
30 g. Butter (salted)
1-2 sprigs Fresh Curry Leaves
3-4 Red Chilies (whole & dried)
1.5 tsp. Fresh Ginger (finely chopped)
½ tbsp. Garlic Cloves (finely chopped)
3 Onion, medium-size (finely chopped)
2 Tomatoes, med size (finely chopped)
1 Green Chili (finely chopped)
Salt to taste
1 tsp. Coriander Powder
2 tsp. + ¼ tsp. Black Pepper Powder
½ cup/ 120 g. Fresh Thick Cream (well beaten)
½ tsp. Garam Masala Powder
6-7 Fresh Coriander Sprigs (chopped)
Method :-
Heat veg oil + butter in a pan/vessel. Add curry leaves + red chilies + ginger + garlic to the vessel. Sauté for 2-3 mins on low-medium flame
Add onions to the pan and sauté for 7-8 minutes on low-medium flame until onion color changes to light golden brown
To the pan add tomatoes + green chili and stir for 4-5 minutes on low-medium flame
Next add salt + coriander powder + black pepper powder to the pan/vessel. Mix well and stir for 1-2 mins on low medium flame
Make a few incisions on shelled eggs and set aside
Add fresh cream to the pan/vessel + boiled eggs to the vessel/pan and mix gently until the eggs gets fully coated with the masala
Next add garam masala powder and mix again. Cook for 2-3 mins on low flame and switch off the gas
Transfer the egg pepper masala to the serving dish and garnish it with grated reserved boiled egg + freshly chopped coriander and black pepper powder
Time to Taste :)
Serve with hot parathas or steamed ghee rice, any indian bread, some kachumber salad and masala papad
