Fried Rice with Chicken Seasoning

Fried rice with chicken seasoning is easy to make by stir-frying mushrooms and fresh vegetables in a savory soy-garlic sauce. This simple weeknight stir-fry is comforting and satisfying. Serve with sunny side up for a healthy and easy lunch/dinner on the table in 20 minutes!

Ingredients :-

2 tbsp./30 ml. Veg Oil (divided equally) 40 g. Butter (salted & divided equally) 150 g. Button Mushrooms (washed well & sliced) 1 Onion, med size (finely chopped) 3 tbsp. Capsicum, mixed (finely diced) ½ tsp. Black Pepper Powder 2 cups/500 g. Cooked Rice (pref a day old boiled rice) 1 tsp. Chicken Seasoning Powder 1 tsp. White Sesame Seeds (toasted)

Coriander Leaves (finely chopped)

For Sauce Seasoning :-

2 tsp. Dark Soy Sauce

1 tbsp. Hot Chili Sauce (sriracha) 1 tsp. Tomato Ketchup 1 tsp. Rice Vinegar

1 tsp. Brown Sugar

5-6 Garlic Cloves (crushed)

Method :-

Heat veg oil + butter in a non-stick pan. Add sliced mushrooms to the pan and stir for 3-4 mins on low-medium flame

Next add onions to the pan and stir for another 2-3 mins

Add diced capsicum + black pepper powder to the pan. Mix well and cook for another minute

Meanwhile veggies are being cooked, let's prepare the sauce seasoning

Add all the sauce seasoning items to a small bowl one by one and mix well

Stir the veggies and add the prepared seasoning sauce mixture to the pan. Stir to mix well

Add cooked rice + chicken seasoning powder + butter to the pan. Fold in and mix well. Stir-fry for another 2-3 minutes on high flame and switch off the gas.

Transfer the cooked rice to the serving bowl and place the sunny side up (half fry eggs) over the cooked rice in both the balls and garnish with finely chopped coriander leaves and toasted sesame seeds and serve hot.
