Garlic Chicken Stir Fry is a quick and easy dinner that’s perfect for those busy weeknights. Cubes of chicken are tossed in a flavorful garlic sauce for a meal and that’s way better than take out! The sauce for this dish is a simple combination of ingredients that you probably already have in the pantry, like chicken broth, chilli flakes and Oregano. This dish is definitely for garlic lovers - give it a try, you will love it.
Ingredients :-
For Marinating :-
3 / ½ kg / 1.1 lb. Chicken Breast ( washed properly)
1 tsp. Salt
½ tsp. Black Pepper Powder
1.5 tbsp. Cornstarch/Corn Flour Powder/Potato Starch
For Pan Fry :-
1.5 tbsp. Vegetable Oil
For Sauce :-
20 g. Butter (salted)
7-8 Garlic Cloves (minced)
1.5 tsp. Cornstarch/Corn Flour Powder/Potato Starch
1 cup/240 ml. Chicken Broth
1 tsp. Oregano (dried)
1 tsp. Red Chilli Flakes
1 tsp. Lime Juice
3-4 Sprigs - Fresh Coriander (finely chopped)
Method :-
For Cutting :-
Place the chicken breast on the cutting board with the pointy end facing your wrist. With a sharp knife, cut across the chicken breast into 3-4 strips (lengthwise), then further place the chicken strips horizontally and again cut into 2 inch pieces. Similarly, cut all the remaining chicken breast into small pieces and set aside
For Marinating :-
In a large bowl add the chicken breast pieces + salt + black pepper powder and mix well. Next add cornstarch/cornflour to the bowl and mix again until all the chicken pieces get well coated
Refrigerate, covered for 30 mins
For Pan Fry :-
Heat a non-stick pan. Add vegetable oil to the non-stick pan. Once the oil is slightly hot, slide the marinated chicken pieces to the pan, separate them with the help of a spatula/fork and stir for 5-7 mins on low-medium flame. Stir continuously to avoid burning
Once the colour changes to light golden brown, lower down the flame and dish out the cooked chicken pieces on a plate. Set aside (covered)
For Sauce :-
To the same pan add butter, once melted add minced garlic to the pan and stir for 1-2 mins on medium flame
Add cornstarch/cornflour to the pan and stir for another 1-2 mins until garlic turns light golden brown in colour
Next add chicken broth to the pan, mix well and stir well to avoid any lumps
Add oregano + chilli flakes + lime juice to the pan. Mix well and let it boil for a minute
Once it starts thickening, add the fried chicken pieces to the pan and mix well with the prepared sauce and stir until the sauce is absorbed by the chicken pieces. Garnish with freshly chopped coriander and mix well
Switch off the gas and serve hot.
