Garlic Herb Potatoes are a tasty side dish for any meal. The potatoes are tossed in a mixture of veg oil, garlic, and herbs, then roasted until crispy and tender. They’re easy to make, have a creamy yet crispy texture, and are tossed in loads of garlic goodness carrying a bold garlic flavor.. It’s a fantastic and super easy way to transform simple ingredients into a delicious side dish.
Ingredients :-
½ kg. Baby Potatoes (peeled & washed thoroughly) Water (enough for boiling) 1 tsp. Salt 1.5 tbsp. Veg Oil 20 g./1 chiplet Salted Butter 7-8 Garlic Cloves (finely chopped) Salt to taste 1 tsp. Black Pepper Powder or (to taste) 1 tsp. Chili Flakes 1 tsp. Italian Seasoning Mixed Herbs 3-4 Coriander Sprigs (finely chopped)
Method :-
In a large bowl add the peeled baby potatoes, wash thoroughly and pat dry. Cut the potatoes into half and set aside
Heat water in a large vessel/bowl on a medium flame. Once the water starts boiling add the chopped baby potatoes to the bowl along with 1 tsp of salt and mix well. Cover & cook for 12-15 mins on low med flame until potatoes start turning soft. Check in regular intervals. Once the potatoes gets completely cooked switch off the gas and with the help of a slotted spoon dish out the boiled potatoes on a plate and allow them to cool down
Heat veg oil + butter in a non-stick pan on a low-medium flame. Once the butter starts melting add the boiled potatoes to the pan and sauté for 8-10 mins on low-medium flame until golden and crunchy. Stir in regular intervals for even cooking
Once the potatoes turn light golden in colour then add chopped garlic cloves + salt + black pepper powder to the pan. Mix well and stir for a minute
Add chili flakes + mixed italian seasoning herbs powder to the pan and mix well. Garnish with freshly chopped coriander and switch off the gas.
