2-3 Green Chillies (whole/roughly chopped)

½ cup/60 ml. Water

80 ml. Mustard Oil

For Curry :-

2 Red Chilies (dried & whole)

2 Onions, med size (finely chopped)

2 Tomatoes, med-size (finely chopped)

½ tsp. Turmeric Powder

Salt to taste

1.5 cups/350 ml. Hot Water

½ tsp. Garam Masala Powder

Process :-

For Marinating :-

Add all the ingredients mentioned under the soaking list ingredients to the bowl one by one. Rub gently and coat the fish pieces evenly, cover it and set aside to marinate for 1 hr

For Green Paste :-

To the blender jar add roughly chopped spinach + garlic cloves + fresh coriander leaves + green chilies + water. Close the lid tightly and pulse it to a smooth paste. Transfer it to a bowl and set aside for later use

For Curry :-

Heat the oil on a low-medium flame. Once hot, slide the marinated fish pieces slowly to the pan and fry in batches for 2-3 mins on low-medium flame. Flip over to cook the other side for another 2-3 mins. Keep changing the sides gently till the outer layer of fish turns to light golden brown in colour

Once done, lower down the flame, dish out the fried fish gently and set aside

Similarly, fry the remaining fish pieces and set aside covered

To the remaining oil add red chilies + onions and sauté for 4-5 minutes on low medium flame. Stir continuously until onion colour changes to light golden brown

Next add chopped tomatoes to the pan and stir for 4-5 mins on low-medium flame

Once the tomatoes turns soft, add the prepared green paste + turmeric powder + salt

to the pan. Mix well and stir continuously for next 7-8 mins until the masala gets dry

Add hot water to the pan and mix well. Cook for 4-5 mins on low flame until gravy slightly thickens

Next, add the fried fish pieces to the pan. Cover and cook for another 5-7 mins on low flame

After 5-7 mins remove the lid and check if the gravy has thickened enough and the fish has been cooked properly. If yes, switch off the gas

Garnish with garam masala powder, let it rest for 4-5 mins and then serve hot

Adjust the salt level as per your taste
