Mango and Corn Salsa

Mango and corn salsa is a fresh and light summer salsa! It’s the perfect combination of sweet, crunchy, and healthy that'll suit all your fresh salsa demands. With the sweet corn kernels, diced sweet mango, bell pepper and red onion, you have an amazing blend of veggies and fruit with such zingy textures in every bite. If you're looking for recipes for corn salsa with a mango twist, just go for it!


Ingredients :-


1.5 cups/ 250 g. Frozen Corn Kernels

Water (enough for boiling)

½ tsp. Salt 2 tbsp. Red Capsicum (diced) 1 Red Onion, med size (finely chopped) 1 Mango large (cut into small chunks) 2-3 tbsp. Fresh Coriander leaves (finely chopped)

Corn Kernels (cold, boiled earlier) Salt to taste

¼ tsp. Black Pepper Powder (or to taste) 1.5. tsp Lime Juice 1 tsp. Honey 3 tbsp. Feta Cheese (crumbled)

1 Packet Nachos (any flavour)



Method :-


Heat enough water in a large vessel/pan. Once the water starts boiling add the frozen corn kernels + salt to the boiling water and give it a stir. Boil for next 7-8 mins on low med flame. Once the corn kernels starts turning soft, switch off the gas and allow them to cool down


Once slightly cold, take a large bowl and a strainer and pass the boiled corn kernels through the strainer and discard the water. Set aside covered


To the large bowl add red capsicum + red onion + mango chunks + coriander + corn kernels + salt + black pepper powder + lime juice + honey. Combine well. Cover and refrigerate for 10-15 mins before serving


Transfer to a serving bowl/plate and top up with crumbled feta cheese. Decorate with some of your favorite flavor nachos and serve.
