Meethi Semiya

Ingredients for Sweet Vermicelli/Seviyan :-
1 cup/ 200 g (approx.) Vermicelli (seviyan)
3 tbsp./ 45 ml Desi Ghee(clarified Butter)
10-12 Raisins
8-10 Cashew Nuts (broken/chopped)
8-10 Almonds (roughly chopped)
1.5 cup/ 350 ml Hot Water
4 tbsp./ 75 g Sugar
3-4 Almonds (slivered for garnishing)
Method :-
Heat ghee/clarified butter in a nonstick pan. Once slightly hot/melted add seviyan/vermicelli to the pan and roast the seviyan/vermicelli for 5-7 mins on a low-medium flame until colour turns to light golden. Keep stirring for even cooking
Once the colour changes to light golden add the nuts /dry fruits to the pan and stir for 2-3 mins on low-medium flame
Add hot water to the pan and mix well . cover and cook for 8-10 mins on low flame
Next add sugar to the pan and mix well. Once starts boiling, cover again and cook for another 5-7 mins on low-medium flame
Remove the lid and stir for 2-3 mins until water gets completely absorbed
Turn off the flame and garnish with slivered almonds/cashews
