Mushroom & Pepper Paneer Bhurji

Prep Time: 15 mins I Cooking Time: 20 mins I Serve: 2 - 3

Mushroom and Pepper Paneer Bhurji : Paneer, capsicum (bell pepper) and mushrooms is a classic combination. It is made with scrambled paneer (Indian cottage cheese), onion, tomatoes, bell peppers, mushrooms and spices. Paneer has a milky flavor on its own, so it taste best when paired with some fresh vegetables. We totally loved this combination so, this is my version of preparing a paneer bhurji with paneer, bell pepper and mushroom. This is an easy & quick recipe that gets done in less than 30 minutes and pairs well with Indian flatbreads like roti, paratha, and Naan!

Ingredients :-

250 g. fresh Paneer/Cottage Cheese (grated/scrambled)

3 tbsp./45 ml. Veg Oil

2 Onion, med-size (finely chopped)

1 Green Capsicum, med-size (finely chopped)

250 g. Mushrooms (washed thoroughly & finely chopped)

1-2 Green Chillies, chopped(optional, avoid if prep for kids)

2 Tomatoes, med-size (finely chopped)

Salt to taste

1.5 tsp. Red Chilli Powder

½ tsp. Turmeric Powder

¼ tsp. Garam Masala Powder

Freshly chopped Coriander (for garnishing)

Method:- (on low-medium flame)

Heat veg oil in a non-stick pan. Add chopped onions to the pan and sauté on low medium flame till translucent. Stir continuously for next 3-4 mins

Add capsicum + mushrooms + green chillies to the pan. Stir for 2-3 mins on low medium flame

Once the onion colour changes to light golden brown add chopped tomatoes + salt + red chilli powder + turmeric powder to the pan. Mix well and sauté for 5-7 minutes until soft and mushy on low-medium flame

Once the tomatoes turn soft and veggies get cooked then add scrambled paneer/cottage cheese and mix well with the masala. Stir for a minute and turn off the flame immediately

Garnish with garam masala powder & freshly chopped coriander

Time to taste :)

Enjoy with chapati/paratha of your choice
