Mushroom Soya Pulao

Mushroom Soya Pulao is one of the most loved pulao recipes. It’s simple, it’s quick, it tastes delicious. It’s enjoyable whenever you want to make quick and easy meals. The Preparation method is also simple and can be cooked in under half an hour. Veggies, Soya chunks, Curd and Indian spices just do not make this pulao a special one but it tastes almost like a Biryani. Soya Mushroom Pulao is something that I am extremely fond of cooking and eating both. Serve with raita, papad, pickle some chilled cucumber salad.



Ingredients :-


1 cup / 250 g. of Basmati Rice (washed and soaked)

½ cup/ 150 g. Soya Granules (soaked & squeezed properly)

Water (enough for soaking for rice + soya granules)

250 g. Mushrooms (stems removed, cut into half & washed properly)

4 tbsp./60 ml - Veg Oil

10-12 - Garlic Cloves (finely chopped)

4 - Onions, med sized (finely chopped)

3 - Tomatoes, med sized (finely chopped)

1.5 - tsp. Red Chilli Powder

1 - tsp. Turmeric Powder

4 tbsp./ 60 g. Curd/Yogurt

Salt to Taste

2 tbsp./ 5-6 Sprigs (Stems removed) Fresh Coriander (finely chopped)

1 tsp. - Garam Masala Powder

1.5 cup / 350 ml - Water



Whole Spices :-


2 Bay Leaf

4-5 Cloves

2 Green Cardamom

1 Black Cardamom

1 tsp Cumin Seeds



Process :-


In a large bowl add rice and water, wash well at least 2-3 times until water gets clear and soak the rice in water for next 20 mins(covered)


In a medium bowl add Soya Granules and water (enough to soak) and soak the soya granules for 15 - 20 mins


As the Soya granules get soft, strain and squeeze out the excess water and wash with fresh water until foam disappears. Squeeze thoroughly and set aside (covered)


Heat 3 tbsp. of Veg Oil in a non-stick kadai/pan. Next add bay leaf + cumin seeds + green & black Cardamom + cloves to the pan/kadai and stir for 2-3 mins on low-medium flame till fragrant


Add garlic cloves to the pan/kadai and stir for another 3-4 mins on low-medium flame


Next add chopped onions to the pan and sauté for 7-8 mins on low-medium flame. Keep stirring to avoid burning


When the onion colour changes to light golden brown add chopped tomatoes to the pan and sauté for another 3-4 mins on low-medium flame


Add salt + red chili powder + turmeric powder. Mix well and stir for 2-3 mins on low-medium flame


Next add curd/yogurt + soya granules + mushrooms to the pan and mix well


Add chopped coriander + garam masala powder to the pan. Mix well and stir for 2-3 mins on low-medium flame


Next add the soaked rice to the pan/kadai and mix gently


Add water to the pan. Mix well and let it come to a boil. Once it starts boiling, cover and cook on a low flame for 15-20 mins


After 20 mins open the lid and check whether the rice is cooked properly. Switch off the gas and let the rice rest for the next 5-7 mins


After 5-7 mins fluff/separate the rice gently with the help of fork/spoon and serve hot


Time to Taste :)


Serve with raita, papad, pickle etc.
