Mutton Chop Masala

Mutton Chop cooked in a masala bursting with wonderful flavors. For every meat lover, mutton chops is always the most recommended starter. But, the magic of this dish gets personified with the masala. It consists of flavorful spices, which are laced onto the mutton chops. If you are looking for a perfect dish for a weekend dinner, then mutton chop masala can be your most loved choice. Once you try this recipe, I bet you will fall for more!


Ingredients :-


For Onion Barista :-

3 Onion, med-size (thinly sliced) Vegetable Oil (enough for deep frying) For Marinating :- 1 kg/2.2 lb. Mutton Chops (wash thoroughly & pat-dry) 1.5 tsp. Salt 1 tsp. Turmeric Powder 1 tbsp. Garlic (minced) ½ + ½ (divided equally) 2 tsp. Green Chili & Coriander Paste (3 green chilies + 10-12 sprigs fresh coriander) 1 + 1 (divided equally) 2 tsp. Fresh Ginger (grated) 1 + 1 (divided equally) ½ cup/120 g (approx. ) Curd/Yogurt Onion Birista (crushed)

For Masala :-

2 tbsp./30 ml Vegetable Oil

1 tbsp./15 ml Clarified Butter/Desi Ghee

½ tbsp. Garlic Cloves (minced, reserved earlier) 1 tsp. Ginger (grated, reserved earlier) 1 tsp. Green Chili & Coriander Paste (reserved earlier) 1 Onion, med-sized (finely chopped) 2 Tomatoes, med-size (grind to purée) ½ tsp. Turmeric Powder 1 tsp. Red Chili Powder Salt to taste 1.5 tsp. Garam Masala Powder (1 tsp. +.5 tsp.) 1 cup/240 ml. (approx. ) Water (divided equally)

Method :-


Heat vegetable oil in a deep pan/vessel. When the oil is medium hot, add the sliced onions to the pan/vessel and fry until the colour changes to light golden brown. Keep stirring continuously for even cooking. This will take approx. 8-10 mins


Once the onion colour changes to light golden brown, dish out onto a plate and let the fried onions cool down


In a large bowl add mutton chops + all the ingredients mentioned under the marinating ingredients list to the bowl. Gently crush the fried onion and add to the bowl. Mix well until all the pieces are well coated. Cover it and set aside for at least 3 hours or overnight for the best results


Heat 2 tbsp of veg oil and 1 tbsp of clarified butter/desi ghee in a non stick pan. Add minced garlic + grated ginger + green chili & coriander paste to the pan. Stir for 2-3 mins on low flame


Add the chopped onions to the pan and sauté for 5-7 minutes on low-medium flame. Stir continuously for even cooking and to avoid burning


Once the onion colour changes to light golden brown add tomato purée to the pan. Mix well and stir for 1-2 mins


Next add turmeric powder + red chili powder to the pan. Mix well and stir for another 3-4 mins until oil starts separating from the masala


Add the marinated mutton chops along with the remaining marinated masala to the pan. Mix well and stir for next 5-7 mins on low medium flame


Add salt + garam masala to the pan. Mix well and stir for next 2-3 mins


Add ½ of water and mix well. Cover and cook for next 30-40 mins on low flame. Stir in regular intervals to avoid burning and sticking of the masala


Add another ½ cup of water to the pan and mix well. Cover again and cook until chops are tender and soft for another 25-30 mins


Remove the lid and check if the mutton chops are completely cooked or not. If yes, garnish with some garam masala powder & switch off the gas


Time to Taste :)

Enjoy with Butter Naan, Garlic Naan, laccha paratha and some pickled cucumbers
