Paneer Bhurji Punjabi Style

Ingredients:-
250 gms fresh Paneer / Cottage Cheese (grated/crumbled)
3 Onions medium sized, chopped
2 Tomatoes medium sized, chopped
2 tbsp Fresh coriander, chopped
2 fresh Green chillies, chopped(optional, avoid if prep for kids)
50 gms, Mawa/Khoya (grated)
10-12 Cashew Nuts, broken / roughly chopped
1 tbsp fresh ginger, chopped
5 tbsp / 70 ml veg oil (divided)
20 gms butter (used salted)
Powdered spices: ½ tbsp red chilli powder
1 tsp turmeric powder
1 tsp garam masala powder
Salt to taste
3 tbsp / 50 ml water
Method: Heat 1 tbsp oil in a non-stick pan. Add broken cashew nuts to the pan and fry till light brown in colour on medium heat. Once done turn off the flame and transfer it to a plate and keep aside.
Turn on the flame, medium heat and to the pan add butter and vegetable oil
Add chopped onions and sauté on medium heat. Once the onion gets tender add chopped ginger and sauté until light golden brown in colour. This will take 6-8 min. Keep stirring to avoid burning
To the pan add chopped green chillies and stir for a minute
To the pan add chopped tomatoes and sauté for 5-7 minutes, until mushy and soft
Next add salt, red chilli powder, turmeric powder, garam masala powder and mix well.
Sprinkle water to avoid burning the masala. Give it a stir
To the pan add grated Mawa/khoya and give it a mix
To the pan add cashew nuts and grated paneer/cottage cheese and mix well with the masala
Garnish with fresh coriander
Time to taste :)
Enjoy with chapati/paratha of your choice
Note : turn off the flame immediately after adding paneer or else it will get dry
