Pineapple Chicken Fried Rice

Prep Time: 20 mins I Cooking Time: 30 mins I Serving: 2-3




Ingredients :-


2 tbsp/30 g Butter (salted)

¾ cup/100 g boneless, skinless Chicken Thighs (cut into 1 inch cubes)

1 tsp Salt

2 Eggs

1 tbsp/15 ml Veg Oil

1 tbsp Garlic Cloves (minced)

1 tsp Fresh Ginger (minced)

2 Onion, medium-sized (finely chopped)

1 small-sized/3 tbsp/30 g Carrot (finely chopped)

¼ cup/4 tbsp/35 g Green Peas (fresh/frozen)I have used frozen ones

4 tbsp/25 g + 1 tsp Spring Onion/Green Onion (finely chopped)

3 tbsp/30 g Sweet Corn (Kernels)

2 cups/500 gms Cooked Rice

1 tbsp Soy Sauce

2 tsp White Vinegar

1 tbsp Hot Red Chilli Sauce (Sriracha)

2 tsp Shaoxing Wine (Optional)

½ tsp White Pepper Powder

½ tsp Black Pepper Powder

½ tsp Garlic Powder

1 cup/200 g approx. Canned Pineapple (chopped)

Salt to taste

1 tsp spring onions (chopped) for garnishing


Method :-


Heat 2 tbsp butter in a non-stick pan. Add chicken cubes to the pan and sauté for 4-5 mins on low-medium flame

Add 1 tsp salt to the pan, stir for another 1-2 mins/until half cooked and turn off the gas. Dish out the half cooked chicken onto a plate and set aside for later use


In a bowl break two eggs and beat well


To the same pan add 1 tbsp of veg oil. Add minced garlic to the pan and stir for 2-3 mins on medium flame


Next add minced ginger to the pan stir for another 1-2 mins


To the pan add chopped onions and sauté for 3-4 mins on medium flame until translucent


Add chopped carrots + green peas + green/spring onions + corn kernels to the pan and cook for 4-5 mins on medium flame (If using fresh peas then blanch them in hot water for 5-7 mins on medium flame)


Next add beaten eggs to the pan and stir for 2-3 mins on medium flame


Add cooked rice + soy sauce + white vinegar + red chilli sauce + shaoxing wine + white pepper powder + black pepper powder + garlic powder + chopped pineapple + salt + sautéed chicken to the pan. Fold in; stir-fry for 1-2 minutes on high flame and switch off the gas.


Garnish with chopped spring onions


Time to Taste:)
