Potato Carrot Frittata

Potato Carrot Frittata : I love making frittatas and this luscious egg breakfast recipe features crispy browned potatoes and colorful fresh vegetables, including carrots, green onions, salt, paprika & cheese. This one pan recipe fits into an entire breakfast. Cherish your Sunday mornings or Monday nights with this golden Frittata with a cup of coffee/tea and love cooking:)


Ingredients :-


3 Potatoes, medium size (peeled & washed properly)

3 Carrots, small (peeled & washed properly)

2 tbsp. + 1 tsp. Vegetable Oil

1 Onion, med-sized (finely chopped)

½ tsp. Rock Salt

2-3 Spring Onions/Scallions (finely chopped)

3 Eggs

Salt to taste (Pref. Rock Salt)

1 tsp. Red Chilli Flakes

5-6 Sprigs/2 tbsp. Fresh Coriander (finely chopped)

½ tbsp. Butter (salted)

4 tbsp/ 20 g - Cheese (cheddar & mozzarella mix)


Method :-


Onto a chopping board or In a large bowl grate all three peeled potatoes. Take water in a large bowl and add the grated potatoes to the bowl and rinse well. Strain the potatoes with the help of a strainer and squeeze out the excess water. Set aside (covered)


Next grate the peeled carrots and set aside


Heat 2 tbsp of veg oil in a pan. Add chopped onions to the pan and sauté for 3-4 mins on low-medium flame until translucent


Add the grated carrots + potatoes + ½ tsp salt to the pan and mix well. Stir for 2-3 mins on low medium flame. Then reduce the flame to low and let it cook for next 7-8 minutes. Keep stirring in intervals for even cooking & to avoid burning


Finely chop the spring onions and set aside


To the large bowl add eggs + salt + red chilli flakes + fresh coriander. Beat well and set aside


Add a tbsp of butter + chopped green onions/scallions to the pan. Mix well and stir for 2-3 minutes on low flame


Add grated cheese + egg mixture to the pan. Cover it with a lid and let it cook for 7-8 mins on low flame. After 7-8 mins remove the lid and check whether it’s cooked from one side or not? If yes, turn off the gas and with the help of a plate flip over the frittata onto a plate


Turn on the gas again and add 1 tsp of vegetable oil to the same pan and slowly slide the half cooked frittata to the pan. Press gently all over the fritta. Cover again and let it cook for another 7-8 mins on low flame


After 7-8 mins remove the lid and check if it’s properly cooked or not? If yes, then switch off the gas


Transfer onto a serving plate & garnish with some freshly chopped coriander(optional)
