Prawn Fried Rice
Prep Time: 20 mins I Marinating Time: 30 mins I Cooking Time: 20 mins I Serving: 2-3

Ingredients :-
250 gms Prawns (cleaned, deveined & patted dry)
2 tbsp / 30 ml Veg Oil (equally divided)
2 Eggs
1 tsp Salt
40 gms Butter (salted)
8-10 Garlic Cloves, chopped
2 Onions med sized, finely chopped
3 tbsp / 40 gms Carrot, chopped
2 tbsp / 25 gms Capsicum, chopped (red/green/yellow)
2 cups / 500 gms Cooked Rice
1 tsp Garlic Powder
1 tsp Chilli Flakes
1 tsp Black Pepper Powder
1 tbsp Soy Sauce
Salt to Taste
Method :-
Heat 1 tbsp of veg oil in a non-stick pan and pour two eggs. Stir for 1-2 mins on medium heat
To the pan add prawns and sauté for 4-5 mins on medium heat until light golden in colour. Add salt and stir for a minute. Once done dish out in a bowl/plate and set aside for later use
Heat 1 tbsp veg oil and butter in a non-stick pan and chopped garlic to the pan and stir for 1-2 mins on medium flame
To the pan add chopped onions and sauté for 3-4 mins on medium heat
Add chopped carrots to the pan and sauté for 2-3 mins. Next add chopped capsicum and sauté for another 2-3 mins on medium heat
To the pan add cooked rice + sautéed prawns & eggs + salt + garlic powder + chilli flakes + black pepper powder + soy sauce. Fold in; stir-fry for 1-2 minutes on medium heat and switch off the gas.
