Soy Garlic Chicken

Soy Garlic Chicken is a simple Asian inspired recipe where chicken thighs pieces are cooked into delicious and super flavorful soy sauce, chicken thighs are my favorite part of the chicken because of the juiciness. With just a handful ingredients this is the best garlic soy chicken recipe. You can adjust the garlic according to your taste. I also added some grated ginger too. This is the easiest marinade I have used here which just turns this recipe into a star dish and one of the most popular with my family. It complements simple boiled rice the most!

Ingredients :-


For Marinade :-


500 g. / 1.1 lb. Chicken Thighs Boneless (cut into 2 inch pieces)

½ tsp. Salt

½ tsp. Black Pepper Powder

½ tbsp. Cornstarch/CornFlour

2 tsp. Shaoxing Wine (optional, but recommended for authentic taste)


For Soy Sauce Marinade :-


½ tbsp. Brown Sugar

3 tbsp./45 ml. Water

1.5 tbsp. Soy Sauce

2 tsp. Shaoxing Wine

½ tbsp. Corn flour/Cornstarch

1 tsp. Olive/Vegetable Oil


For Gravy :-

1.5 tbsp/20 ml approx. Vegetable Oil

8-10 Garlic Cloves (peeled & minced)

1 inch Ginger (peeled & minced)

250 g. Mushrooms (stems trimmed, washed thoroughly & sliced to 1 inch pieces)

2 Capsicum, med size (any colour of your choice & thinly sliced)



Method :-


For Marinating :-


In a large bowl add all the ingredients mentioned under the marinade section. Mix well until all the chicken pieces are well coated. Cover it and set aside for 30 mins


For Soy Sauce Marinade :-


In a small bowl add all the ingredients mentioned under the marinade section. Mix well until homogenized


For Gravy :-


Heat 1.5 tbsp of veg oil in a non-stick pan. Add minced ginger & garlic to the pan and stir for 1-2 mins on medium flame


Next add sliced mushrooms + capsicum to the pan and sauté for another 1-2 mins


Add the marinated chicken to the pan. Mix well and cook for 7-8 mins on low-medium flame. Stir continuously for even cooking & to avoid burning


Once the chicken starts releasing water & turns light brown from outside, add the prepared marinade to the pan and mix well. Cook for another 3-4 mins. When the gravy thickens and chicken is cooked properly, switch off the gas.


Garnish with some roasted peanuts & serve hot:)

Serve hot with boiled rice/ egg fried rice (my choice)/chicken fried rice and a nice chilled drink of your choice
