Spicy Chicken Noodles
Prep Time: 20 mins I Cooking Time: 30-40 mins I Serving: 2-3

Ingredients :-
For boiling :-
250 gm Noodles
400 ml Water (for boiling)
2 tsp Veg Oil
½ tsp Salt
For Chilli Garlic Paste :-
3-4 Red Chilli (dried & whole)
1 Garlic Bulb, large sized (peeled)
Water (enough for soaking)
5-6 Fresh Coriander Sprigs (washed & chopped)
1 tbsp. Olive/Veg Oil
For Stir-fry :-
2 tbsp./30 ml Veg-Oil
200 g Chicken (minced)
Salt to taste
1 tsp Black Pepper Powder
2 tsp Soy Sauce
1.5 tsp Vinegar(white)
Method :-
For boiling :-
Boil water in a vessel on a medium flame. Once it starts boiling add ½ tsp of salt + 2 tsp of veg oil and noodles. Once soft, separate the noodles gently. Boil it for 5-7 mins on medium flame. Once half cooked switch off the gas
Strain the boiled noodles and rinse it with cold water. Separate them using tong/fork and set aside for later use
For Chilli Garlic Paste :-
To the pan add red chillies + garlic cloves. Dry roast for 4-5 mins on low flame until aromatic and colour changes to light brown. Once done, dish out in a bowl and remove stems. Add enough water for soaking and soak for 30-mins
Add the soaked chillies + garlic + fresh coriander + olive/veg oil to the grinder jar and grind to a smooth paste. Set aside for later use (add little water if required)
For Stir-fry :-
Heat veg oil in a non-stick pan. Once hot add minced chicken to the pan and sauté for 3-4 mins on low-medium flame. Add salt + black pepper to the pan . Mix well and stir for another 3-4 mins on low-medium flame
Add the chilli garlic paste mix to the pan. Mix well and cook for 5-7 mins on low-medium flame
Add boiled noodles to the pan and mix well.
Add soy sauce + vinegar to the pan. Mix well and cook for 2-3 minutes on high flame. Turn off the flame
Transfer onto a serving platter
Time to Taste:)
Enjoy with chilli chicken gravy, fried egg or just like that :)
