Egg Malai Curry

Hard Boiled eggs tossed with tempting creamy sauce is a perfect and easy dinner option. This hearty egg recipe gets ready in no time and has so much flavor that is hard to believe it’s a delicious one pot meal which is ready in just under 30 mins.

Ingredients :-

6 Eggs (Hard Boiled,  shelled & cut into half)

3 Onions, med-size (roughly chopped)

7-8 Garlic Cloves

2 Green Chilies

1 tsp. Cumin Seeds

7-8 Black Peppercorns

3 tbsp. /45 ml Veg Oil 

1 cup/230 ml. Milk (boiled & room temp.)

¼ tsp. Black Pepper Powder

1 tsp. Garam Masala Powder

Salt to taste

2-3 tbsp. Green Coriander Leaves (finely chopped)

¼ tsp. Red Chili Powder

Method :-

To the grinder jar add onions + garlic + green chilies + cumin seeds + black peppercorns

Heat veg oil in a pan/vessel. Add grinded onion paste to the pan, stir for 7-8 minutes on low-medium flame until onion colour changes to light golden brown. Stir continuously in regular intervals

Next add milk to the pan and mix well. Once the milk starts boiling add black pepper powder + garam masala powder to the pan and mix well 

Next add salt to the pan and mix well and stir for 1-2 mins on low medium flame

Add eggs to the pan and cook for 1-2 mins, flip over and cook for another 1-2 mins. Stir gently. Cover and cook for 2-3 mins on low flame. Remove the lid and stir gently

Garnish with chopped coriander and red chili powder. Mix again and cook for another minute and switch off the gas.

Transfer the egg malai curry to the serving dish and serve hot

Time to Taste :)

Enjoy with hot parathas or steamed ghee rice, any indian bread of your choice and fresh bowl of salad.
