Creamy Mashed Potatoes is a dish made by mashing boiled potatoes, usually with added milk, butter, salt and pepper. It is generally served as a side dish to meat or vegetables. These potatoes are great and really easy to make. The garlic taste is subtle, but not overwhelming....the cheese adds a creaminess. Best mashed potatoes I've ever had and the cream cheese is the secret! Try out this version and make your weekend's breakfast special with loved ones:)
Ingredients :-
4 Potatoes, med size (peeled, cut into quarters & washed properly)
Water (enough for boiling)
½ tsp. Rock Salt
40 g./2 tbsp. Butter (salted)
½ cup/120 ml. Milk (boiled & at room temperature)
5-6 Garlic Cloves (minced)
1 tbsp. Cream Cheese
Salt to taste
1 tbsp./15 ml. Olive Oil
½ tsp. Black Pepper Powder
2-3 Fresh Coriander Sprigs/ 1 tbsp. Fresh Coriander (finely chopped)
Method :-
To the large bowl/vessel add water + rock salt and let it come to a boil. Once it starts boiling add potatoes to the bowl/vessel. Give a stir and cover the bowl/vessel with a lid. Let the potatoes cook for next 8-10 mins on low medium flame until soft
After 10 mins remove the lid and with the help of a fork check whether the potatoes have cooked properly or not? If yes, switch off the gas and dish out the boiled potatoes in a strainer and allow them to cool down
Once cold, mash the boiled potatoes in the strainer with the help of a spoon & allow to pass through the strainer for a smooth consistency. Set aside covered for later use
Heat butter in a non-stick pan. Once it starts melting add milk to the pan and let it come to a boil. Once it starts boiling add the minced garlic to the pan. Mix well and stir for 1-2 mins on low-medium flame
Next add the mashed potatoes to the pan. Mix well and stir for next 2-3 mins on low flame until milk gets completely absorbed by the potatoes and the potatoes texture turns into a smooth paste
Add cream cheese + salt to the pan and mix well. Stir for a minute and switch off the gas.
Transfer the mashed potatoes to a serving bowl and pour a tbsp. of olive oil on top of the potatoes
Sprinkle black pepper powder over the mashed potatoes and garnish with freshly chopped coriander
Time to Taste :)
Serve hot with boiled/poached eggs, sautéed veggies, grilled chicken/fish or breakfast of your choice
