Thai Chicken Fried Rice

Boneless chicken pieces mixed with thai red curry paste, fresh veggies and boiled rice, tossed with tempting sauces is a perfect and easy dinner option. This hearty fried rice recipe gets ready in no time and has so much flavor that is hard to believe it’s a delicious one pot meal which is ready in just under 30 mins.

Ingredients :-

2 tbsp./30 ml Veg Oil 350 g.

Boneless Chicken Thighs (cut into small pieces)

Salt to taste + ½ tsp.

½ tsp. Black Pepper Powder

4-5 Garlic Cloves (finely chopped)

1 Red Onion, med size (finely chopped)

3 tbsp. Carrot (peeled & diced)

3 tbsp. Capsicum (finely chopped)

½ tbsp. Red Thai Curry Paste (store-bought)

1 tsp. Fish Sauce

1 tsp. Oyster Sauce

½ tsp. Shaoxing Wine

2 cups/500 g. Cooked Rice

1 tsp. Chicken Stock Powder

1 small Scallions/Green Onion (finely chopped)

Method :-

Heat veg oil in a non-stick pan. Add chicken pieces to the pan and sprinkle ½ tsp of salt + black pepper powder to the pan and stir for 4-5 mins on low-medium flame. Stir in intervals for even cooking

Once the chicken is almost 80 percent, set it aside in the same pan. Add chopped garlic to the pan and stir for 5-7 seconds

Next add chopped onions and stir for 1-2 mins on medium flame. Stir continuously

Add carrots + capsicum to the pan and stir-fry for 1-2 minutes on medium flame. Add red Thai curry paste + fish sauce + shaoxing wine + oyster sauce to the pan, mix well and stir continuously for another min

Then, add cooked rice to the pan and mix well. Finally add chicken stock powder + green onions to the pan. Fold in and mix well. Stir-fry for another 2-3 minutes on high flame and switch off the gas.
