Homemade Lychee Syrup

Prep Time: 30 - 40 mins I Serve: 4 - 5

This simple recipe for Homemade Lychee Syrup features real, fresh lychees, sugar and water. It's a sweet, floral and fruity syrup that is perfect to sweeten all your summer drinks and desserts!

Ingredients :-

2.5 Kg. Lychees 2 cups Lychee Pulp (seedless & sweet) 1 cup/200 g. Sugar 1 cup/230 ml. Water

Method :-

Add sugar + water to the pan and mix well, bring it to a boil. Once the sugar gets completely dissolved and the water starts boiling add the lychees to the pan and give it a stir. Allow the lychees to simmer for 12-15 mins on low flame until lychees turn soft

Once the lychees turn soft and the syrup has reduced to half, switch off the gas and allow it to cool down. Once completely cold add the lychees along with its syrup to the blender jar and blend to a purée

Take a large bowl and pass the puréed lychees through a strainer, stir with the help of a spoon and allow the puree to pass completely. Discard the remaining pulp. Transfer the syrup to the glass bottle and store in the fridge for 1 week. Use for shakes, mojito, lassi, smoothies, ice creams etc.

Time to taste:)
