Lychee Ice Cream

Lychee Ice Cream is definitely easy to make with condensed milk, whipping cream and lychees. This is the best homemade version without an Ice Cream Maker. This easy homemade ice cream is super creamy and sweet, with a Goodness of delicious Lychee, fluffy frothy cream, sweetness from condensed milk and few drops of vanilla essence which definitely makes it complete. It's an eggless ice cream with smooth, creamy and light texture. Try out this trending version of homemade Lychee ice cream and enjoy summers with this hit and favorite recipe!


Ingredients :-


For Lychee Purée :-


2 Kg/2.2 lb. Lychees (No stem) 7-8 Lychee pulp (Reserve, finely chopped)


For Ice Cream :-


500 ml. Whipping Cream

½ tsp. Vanilla Essence

1 cup/240 g. Condensed Milk (I have used Nestle Brand) 1 tbsp. Strawberry Syrup(divided equally) Few Mint Leaves (to garnish)

Process :-


Add lychees(no stem) to a large bowl. Peel off the outer shell and remove the seed inside the lychees. Reserve 7-8 lychee pulp for later use


Next add the lychee pulp to the blender jar and purée until smooth. Set aside (covered) for later use


Add the whipping cream to a large bowl and beat well on a medium to medium high speed with the help of an electric blender. Whisk just until the cream gets fluffy. Keep the bowl in the freezer for an hour and then whisk again to make it more fluffy and thick

Next add vanilla essence + condensed milk + lychee purée to the bowl. With the help of spatula mix well


Properly, cover the bowl with cling film and keep the bowl in the deep freezer and let the ice cream freeze for next 5-6 hrs.


After 6 hrs. take out the bowl from the freezer remove the cling film and whisk again to make it more fluffy and this will also allow the lychee purée to mix evenly


Next, transfer the mixture to the loaf pan. Add the reserved lychee chunks to the loaf pan. Mix well


Properly, cover the loaf pan with the cling film and keep the loaf pan in the deep freezer and let the ice cream freeze overnight


Next day take out the ice cream from the freezer and with the help of an ice cream scooper, scoop out the ice cream and transfer to the serving glasses. Top it with strawberry syrup or chocolate syrup(optional) or with any topping of your choice and enjoy this delicious lychee ice cream.
