Pineapple and chicken sausage fried rice

Pineapple and chicken sausage Fried Rice in which pineapple chunks, chicken sausages and egg are cooked togather and then the rice is seasoned with soy sauce, hoisin sauce, ginger, garlic and some veggies. As an alternative to Chinese sausage, you can substitute thick matchsticks of bacon. The key to the best fried rice is using a day old rice. Enjoy this simple and easy meal with your family on busy weeknights or lazy weekends!

Ingredients :-

2 tbsp. Veg Oil 8-10 Garlic Cloves, finely chopped 1 Onion, large (finely chopped) ¼ cup Green Onions (both white & green part, finely chopped) ½ Carrot, small size (cut into thin strips)

3 tbsp. Green Capsicum (diced) 1 Egg 2 Chicken sausages (cut into small pieces)

¼ cup Sweet Pineapple Slices, preserved (cut into small pieces) 1.5 cup Cooked Rice 2 tsp. Cooking Wine 1 tbsp. Oyster Sauce ½ tbsp. Sriracha/Hot Chili Sauce ¼ tsp. Black Pepper Powder 2 tsp. Soy Sauce Salt to taste

Method :-

Heat 2 tbsp of veg oil in a non-stick pan. Next add chopped garlic + onions to the pan and stir for 1-2 mins on medium flame

Add green onions to the pan and stir for another 30-40 seconds. Next add carrots + capsicum + egg to the pan. Mix well and stir for another 30 seconds

Once the egg gets scrambled and mixed with the veggies then add sausages + pineapple to the pan. Mix well and cook for another minute on medium flame. Stir continuously

To the pan add cooked rice + cooking wine + oyster sauce + Sriracha/Hot Chili Sauce + Black Pepper Powder + Soy Sauce + salt to the pan. Fold in; stir-fry for 1-2 minutes on medium flame and switch off the gas.

Garnish with finely chopped green onions/scallions and serve hot:)
