Thai Lemongrass Coconut Rice

The Lemongrass Coconut Rice, a simple and delicious Thai recipe which can be served on its own can be served with a simple Thai Green/Red/Yellow Curry Recipe and Mushroom Bok Choy Stir Fry for a quick weeknight/weekends dinner whenever you are in a mood to have something easy yet special. The flavors of lemongrass, chicken broth and coconut togather makes it simply mouthwatering.


Ingredients :-


1 cup/200 g Basmati Rice (washed, soaked & dried )

Water (enough for soaking)2 tbsp. Veg Oil2 cups/480 ml. Chicken Stock/Broth1 Lemongrass Stalk (cut into 3-4 inch pieces)Salt to taste½ cup Thick Coconut Milk


Method :-


In a large bowl add rice and water, wash 2-3 times until water gets clear and soak the rice in enough water for next 30 minutes. After 30 mins discard the water and rinse with fresh water.


Take a pan and heat 2 tbsp of veg oil. Once slightly hot add the rinsed rice to the pan and sauté for 2-3 mins on low flame. Add 2 cups of chicken stock + lemongrass stalk + salt +

 Coconut milk to the pan. Mix well


Cover and cook for 8-10 minutes on low flame until all the water is absorbed and the rice is properly cooked


Switch off the gas and let the rice rest for 2-3 mins


Fluff the rice gently


Time to taste:)
