Tomato Rice

Tomato Rice OR Tomato Pulao is super quick and easy recipe and favorite among rice lovers. It's spicy sour taste from tomatoes & chilies gives a beautiful tangy texture to this recipe. The recipes has the perfect balance of flavors and tastes which makes this recipe superhit with the family. To balance the spiciness you can serve this with a chilled curd, coconut chutney, rasam, papad etc.


Ingredients :-


1 cup/200 g. Basmati Rice (washed & soaked)

Water (enough for soaking)

1 tbsp./15 ml. Ghee/Clarified Butter

2 tbsp./30 ml. Vegetable Oil

7-8 Curry Leaves

10-12 Cashew Nuts (broken)

½ tbsp. Garlic Cloves (minced)

1 tsp. Fresh Ginger (grated)

3 Onion, medium size (finely chopped)

3 Tomatoes, medium size (finely chopped)

Salt to taste

1 tsp. Turmeric Powder

1 tsp. Red Chili Powder OR (to taste)

½ tsp. Black Pepper Powder

2 tbsp. Fresh Coriander (finely chopped)

1.5 cups/350 ml. + 1.5 tbsp. Water



Whole Spices :-


5 Cloves (whole)

1 inch Cinnamon

3 Red Chilies (whole & dried)

1.5 tsp Black Mustard Seeds (big)

3 Green Cardamom (whole)


Method :-


In a large bowl add rice and water, wash 2-3 times until water gets clear and soak the rice in enough water for next 30 minutes. After 30 mins discard the water, rinse with fresh water and set aside for later use


Take a pressure cooker and heat ghee/clarified butter + vegetable oil. Next add cloves + cinnamon stick + red chilies + mustard seeds + green cardamom + curry leaves + cashew nuts to the pan and stir for 2-3 mins on low-medium flame until fragrant


Add minced garlic + grated ginger to the pressure cooker and stir for another 3-4 mins on low-medium flame


Add chopped onions to the pressure cooker and sauté for 7-8 mins on low-medium flame. Stir continuously to avoid burning


Once the onion colour changes to light golden brown add chopped tomatoes to the pressure cooker and stir for 3-4 mins on low-medium flame


Next add salt + turmeric powder + red chili powder + black pepper powder to the pressure cooker. Mix well and stir for 1-2 mins. Add 1.5 tbsp. of water to deglaze and stir for another 4-5 mins on low medium flame until tomatoes gets soft and mushy


Add soaked rice to the pressure cooker. Mix gently and stir for 2-3 mins. Next add chopped fresh coriander and water to the pressure cooker. Mix well


Close the pressure cooker and cook for 2 whistles on low medium flame


After 2 whistles, switch off the gas. Allow the pressure to release naturally. Do not open the pressure cooker immediately


Once the pressure is released completely, open the lid and using a fork/spatula, separate/fluff the cooked rice gently & serve hot


Time To Taste :)


Serve with chilled raita/papad/coconut chutney/pickle & some salad
