Maggi Shakshouka - Shakshouka is a dish from Northwest Africa, where eggs are poached in a sauce of tomatoes, oil, peppers, onion and garlic, commonly spiced with cumin, paprika and cayenne pepper. Chicken masala tossed with boiled maggi makes it even more delicious and the half cooked eggs makes it completely an irresistible dish. This is the perfect dish for weekends and loved by everyone!

Ingredients :-

3 Maggi Cakes with seasoning

3 cups/ 700 ml. approx. Water 3 tbsp./45 ml. Vegetable Oil

8-10 Garlic Cloves (minced) 2 Onion, medium size (finely chopped) 1 Green Capsicum, small size (finely chopped)

250 g. Chicken (minced)

1 Tomato, large (puréed) Salt to taste

½ tsp. Turmeric Powder 1 tsp. Red Chili Powder ½ tsp. Coriander Powder 1 Chicken Bouillon Cube 4 Eggs

Method :-

To the pan add 3 cups of water and bring it to a boil. Add 3 maggi cakes along with the seasoning and boil for 5-6 mins on low medium flame. Separate the noodles with the help of a fork. Once the noodles are al dente which means the noodles should still have a little resistance when you bite into it, switch off the gas and set aside for later use (cover it with mesh not plate)

Heat the veg oil in a pan, add minced garlic to the pan and stir for 1-2 mins on low medium flame. Next, add the chopped onions to the pan and sauté for 2-3 mins until translucent

Add the chopped capsicum to the pan and stir for another 1-2 mins on low medium flame. Next add the minced chicken to the pan and cook for 5-7 mins on low medium flame. Stir continuously for even cooking

Add the tomato purée + salt + turmeric powder + red chili powder + coriander powder to the pan. Mix well and stir for next 3-4 mins on low-medium flame. Also break the lumps of the chicken (in case any). Cover and cook the minced chicken for next 8-10 mins on low flame

After 10 mins remove the lid and check if the chicken has cooked properly or not. Break the chicken lumps and mash it with the help of a spatula

Add a chicken bouillon cube to the pan, mash it and mix well with the chicken. Next add the boiled maggi to the pan and mix well with the chicken with the help of tong

Using a spatula or a tong make 4 indentations in a cooked maggi and gently place the cracked egg into each indentation. Cook, covered, until egg whites are completely set and yolks begin to thicken but are not hard, cook for 4-6 minutes on low flame and switch off the gas

Sprinkle some freshly chopped coriander (optional) and serve hot
