Potato Brinjal Fry

Potato Brinjal Fry is the best combination of potatoes and brinjals, not just it taste delicious but also super easy to make. Brinjals and potatoes are fried separately and then mixed together. The addition of spices and condiments enhance the flavor further to make this crisp recipe. Try this with parathas, chapati or it also goes amazing with rice and dal.


Ingredients :-


5-6 Potatoes, med-size (peeled, washed & cubed)

2 Brinjals, large (remove both the ends, cut into half and then cut into 2 inch pieces, lengthwise) 10-12 Garlic Cloves (finely chopped)

5-6 Coriander Sprigs (finely chopped)

4 tbsp./60 ml. Veg Oil Salt to taste 1 tsp. Red Chili Powder 1 tsp. Coriander Powder ½ tsp. Black Pepper Powder


Method :-


Take the peeled and washed potatoes and cut half, lengthwise and then into small cubes. Take a large bowl half filled with water and add the cubed potatoes to the bowl. Wash well, strain and allow them to dry.


Similarly, remove both the ends of the brinjals, cut into half and then cut into 2 inch pieces, lengthwise. Take another large bowl, half filled with water and add the brinjals pieces to the bowl. Wash well, strain and allow them to dry.


Heat veg oil in a pan/kadai. Add the cubed potatoes to the pan. Stir for 1-2 mins on low-medium flame. Cover with lid and cook for 10-12 mins until potatoes turn soft and light golden in colour on low flame. Stir in regular intervals for even cooking


Once the potatoes turn light golden in colour and are cooked properly, lower down the flame, dish out onto a plate and set aside for later use


To the same pan add chopped brinjal pieces. Stir for 1-2 mins on low-medium flame. Cover with lid and cook for 10-12 mins until brinjal pieces turn soft and light golden in colour on low flame. Stir in regular intervals for even cooking


Once the brinjal pieces turn light golden in colour and are cooked properly, lower down the flame and slowly add the cooked potatoes + salt + red chili powder + coriander powder + black pepper powder + chopped garlic to the pan. Mix well and stir for 1-2 mins on low-medium flame


Switch off the gas and garnish with freshly chopped coriander.


Time to Taste :)


Serve hot with Tawa Paratha, Laccha Paratha, ghee chapati or as sider with Dal & rice combo with some chilled cucumber raita


Note : pls adjust the spice levels to your taste.
