This simple yet delicious meal can be on the table in 30 minutes or less! This recipe is quite simple and still tastes so delicious and addictive. Indian street food plays a major role in defining the food culture of the country. Street-style noodles tossed with veggies, egg, chicken and spices - chowmein never fails to steal our heart.
Ingredients :-
For boiling :-
250 g. Noodles
400 ml. Water (for boiling)
2 tsp. Veg Oil
½ tsp. Salt
For Stir-fry :-
2.5 tbsp Veg-Oil
1 Green Capsicum, med size (thinly sliced)
1 Carrot, med size (thinly sliced)
1 Onion, med size (thinly sliced)
1 cup/100 g Cabbage, shredded
Salt to taste
¼ tsp Red Chili Powder
½ tsp Black Pepper Powder
½ tbsp Soy Sauce
2 tsp White Vinegar
1 tsp Green Chili Sauce
1 Sunny side up to garnish
Method :-
For boiling :-
Boil water in a vessel on a medium flame. Once it starts boiling add noodles + ½ tsp of salt to the vessel. Stir to mix well
Once soft, separate the noodles gently. Boil it for 5-7 mins on medium flame. When half cooked switch off the gas. Strain the boiled noodles and rinse it with cold water. Spread the noodles on a large plate and glaze them with 2 tsp of veg oil. Separate them using tong/fork and set aside for later use
For Stir-fry :-
Heat veg oil in a pan. Once hot, add sliced onions to the pan and sauté for 1-2 mins on medium flame
To the pan add sliced vegetables one by one along with the boiled noodles. Next add salt + red chili powder + Black Pepper Powder + Soy Sauce + White Vinegar + Green Chili sauce
Mix well; cook for 3-4 mins on high flame and switch off the gas
Transfer onto a serving platter and top up with one sunny side up:)
