Thai Hot & Sweet Chicken Wings in Peanut Butter

Thai Hot & Sweet Chicken Wings with peanut butter are coated with Thai red curry paste and sweet chili sauce. You get all the sticky Thai peanut sauce flavors without a special trip to the restaurants. These Thai flavored pan seared wings are easy to make and are the perfect appetizer for game-day treat or enjoy oneself. So, place these as centerpieces for your next party fare and wait for the showers of compliments!


Ingredients :-


For Marinade :-


1 kg/2.2 lb. Chicken Wings (Whole - divided into drumettes and flats, washed properly & pat-dry) Salt to taste 1 tbsp. Red Thai Curry Paste (store bought) 2 tbsp. Thai Sweet & Chili Sauce 1 tsp. Fish Sauce


For Sauce :-


2 tbsp. Vegetable Oil ¼ cup/60 ml. Thai Sweet & Chili Sauce 1 tsp. Fish Sauce ¼ cup/60 ml. Water 3 tsp. Smooth Peanut Butter 2 tbsp. Roasted Peanuts (crushed)


Method :-


For Cutting :-


Place the chicken wing on your cutting board and position a sharp knife directly between the exposed joint. Press down and cut through the joint. Use a sharp knife to cut straight through the wingette & drumette and then the tip, cleanly separating all three pieces


Use the wingette and drumette in the recipe and discard the wing tips


Wash them again (if needed), pat-dry and set aside for later use(covered)


For marinating :-


In a large bowl add the chicken wings and next, add all the ingredients mentioned under the marination list one by one. Mix well until all the chicken wings gets well coated with the marinade


Cover it & keep in refrigerator for minimum 3 hrs./overnight for best results


For Pan Frying :-


Next day, take out the marinated chicken wings from the refrigerator and mix again with the marinade and set aside


Heat 2 tbsp of vegetable oil in a non-stick pan over a low medium flame. Add Thai sweet and chili sauce + fish sauce + water to the pan. Stir to mix well


Next, add the peanut butter to the pan and mix well with the sauce. Add the marinated chicken wings to the pan along with the remaining marinade. Mix well with the sauce. Cover and cook for 20-25 mins on low flame. Stir in regular intervals


After 10-12 mins remove the lid and stir. Cover again and cook for another 10-12 mins on low flame until the chicken wings get completely cooked. Don't forget to stir in intervals.


Remove the lid and check if the chicken wings are completely cooked? If yes, then add the crushed roasted peanuts over the cooked chicken wings. Give a gentle mix and switch off the gas


Transfer the chicken wings to the serving plate and garnish with fresh finely chopped coriander leaves and roasted crushed peanuts and serve with dip of your choice
