Chicken Sausage Fried Rice recipe is easy to make and is prepared with egg, carrot, rice, chicken sausage, ginger, garlic, celery, soy sauce, rice vinegar and seasonings. Ingredients :-
2 tbsp./30 ml Veg Oil (divided equally))
2 Eggs Salt to taste + ¼ tsp.
¼ tsp. Black Pepper Powder 1.5 tsp. Dark Soy Sauce 1.5 tsp. Shaoxing Wine 2 tsp. Hoisin Sauce 1.5 tsp Fish Sauce
2 tsp. Chicken Broth Powder 2 tbsp./30 ml. Water ½ tsp. Sugar 2 cups/500 g. Cooked Rice 4-5 Garlic Cloves (finely chopped) 1 Onion, large size (finely chopped) 3-4 Scallions/Green Onion (finely chopped) 1 Carrot, small (peeled & diced) 3 tbsp. Capsicum, mixed (finely diced) 2 Sausages (cut into half, thinly sliced) 1 tsp. White Sesame Seeds(toasted) Method :-
In a med size bowl break two eggs. Then add ¼ tsp of salt + ¼ tsp of black pepper to the bowl. Whisk until mixed well. Set aside
In a small bowl add soy sauce + shaoxing wine + hoisin sauce + light soy sauce + chicken broth powder + water. Whisk well. Next add sugar to the bowl and whisk again until well dissolved
Cut the vegetables and sausages. Set aside (covered)
Heat 1 tbsp of veg oil in a non-stick pan. Add cooked rice and beaten eggs to the pan and stir for 3-4 mins on low-medium flame until the eggs get completely cooked and mixed well with the rice
Once the eggs get completely cooked and mixed with the rice, set the cooked rice aside in the pan. To the same pan add another 1 tbsp of vegetable oil. Add chopped garlic cloves + onions + scallions/green onions + carrots + capsicum + sausages to the pan. Mix well and stir continuously for another 1-2 mins on medium flame
Next add the prepared sauce seasoning/mixture to the pan. Fold in and mix well. Stir-fry for another 2-3 minutes on high flame and switch off the gas
Transfer the cooked rice to the serving bowl and garnish with finely chopped scallions and toasted sesame seeds and serve hot.
